A Refreshing Summer Staple! Bibim guksu, meaning "mixed noodles" in Korean, is a cold noodle dish coated in a spicy and tangy gochujang sauce. Topped with kimchi for an extra punch, it's the perfect quick and easy meal.

Traditionally made with somyeon (thin wheat flour noodles) or soba noodles, you can also use Korean instant ramyeon or angel hair pasta for convenience.

🛒 SHOPPING LIST

  • 200g sour kimchi, chopped
  • 200g Thin wheat thin noodle 
  • Some cucumber, thinly sliced
  • 1 boiled egg, cut into 2 pieces
  • Crushed sesame seeds
  • For the sauce:
  • 3 tbsp gochujang
  • 2 tbsp apple vinegar cider 
  • 2 tbsp sugar 
  • 1 tbsp soy sauce or worcester sauce 
  • 1 tbsp kimchi juice
  • 1 tbsp sesame oil 
  • 2 clove garlic, minced

🍳 LET'S COOK

  1. Make the sauce: In a bowl, combine all sauce ingredients and mix well. Set aside.
  2. Cook noodles according to package instructions. Rinse thoroughly with cold water to cool and maintain a chewy texture. Drain well.
  3. In a large bowl, mix cooked noodles, chopped kimchi, and the sauce. Toss to coat evenly.
  4. Divide the noodle between two bowls. Topped with sliced cucumber, egg, and sesame seeds. Enjoy!
